Homemade Sandwich Cookies- take THAT, Oreos!

Yes. It's true..we like cookies here on the farm! (But some of us are on a diet)




It really BUGS me when people try to pigeon hole me.


I've met so many people who assume lots about me. She grows "organically"...therefore.


Therefore... she doesn't smoke, drink, drink coffee, eat crap, take pills.


She also doesn't eat cookies, use white flour and sugar or have friends who are the complete opposite of me.


She votes Green. 


I'm serious. People have said these things to me. 


Some of those by the way are true. But, for the record, I don't smoke. You can ponder about the rest...but really, who cares?


 I do like to bake though.


And I have discovered a new favourite flour - King Arthur's .


This flour rocks. 


No...it isn't Canadian. But in the perfect world, I'm not perfect. 


But I have no issue supporting good companies from other countries...why would I?


Good is good. And it is damn good flour.


And it makes good cookies. (And No knead bread )


THIS recipe has become my 10 year old daughter Mollie's specialty.


It is really, really good.


Mollie's cookies

Homemade Sandwich Cookies


(for the chocolate shortbread)


1/2 cup butter or vegan alternative..I used Earth Balance.
1/2 cup icing sugar
1/2 cup cocoa
1/2 tsp salt
1/2 tsp vanilla extract
3/4 cup flour


Cream butter, add icing sugar and mix till fluffy. Add cocoa powder, salt and vanilla. Mix well.
Work in flour until dough is soft. Need lightly and then chill for 40 minutes.
Dust the chilled dough with flour, then roll out to 1/4 " thick between two sheets of wax paper. Cut into 2" rounds. Bake at 350 F for 10-12 minutes, then cool.


For the filling: 1 1/4 cup icing sugar
1/2 cup butter or alternative
1/2 tsp vanilla extract
1/4 tsp salt


Whip all together until light and fluffy.


Create sandwiches by icing cookies when cool and topping with another.


Delish!


Yes ! To answer your questions- I will nibble on a cookie from time to time. But not store bought cookies. Good homemade cookies are the way to go...enjoy!
